Quick + Easy BLT Chicken Salad

Ingredients

  • ½ pieces bacon, sliced
  • 3 cups shredded chicken or other leftover chicken
  • 3 pieces green onions, diced
  • 1 cup cherry tomatoes, quartered
  • 4 tbsp mayo
  • 1 tbsp dill
  • 4-6 pieces broad leaf greens for shells (chard, collard greens, romaine, cabbage)

Instructions

  1. Cook diced bacon in a medium pan over medium heat for 6-8 minutes until crispy, then remove to cool.
  2. While the bacon cooks, chop the green onions and cherry tomatoes, and place them in a bowl.
  3. Add the shredded chicken to the bowl with the onions and tomatoes.
  4. Mix in the cooked bacon, mayo, and dill until well combined.
  5. Prepare the lettuce leaves to use as shells.
  6. Fill the lettuce leaves with the BLT chicken salad mixture and serve.
