Ingredients

The lentils

  • 1 cup dry lentils

The cooking liquid

  • 3-4 cups water or broth

Optional flavor add-ins

  • ¼ - ½ teaspoon sea salt
  • 1 piece bay leaf
  • to taste fresh herbs
  • to taste dried herbs
  • 1 whole garlic or onion
  • to taste kombu

Instructions

  1. Add lentils and water to a pot along with any desired flavorings.
  2. Bring to a boil, then reduce to a simmer, cover, and cook for the appropriate time based on the type of lentil.
  3. For red lentils, cook for 7-10 minutes; for brown/green lentils, 12-15 minutes; for black lentils, 15-17 minutes; and for French green lentils, 20-23 minutes.
  4. Drain any remaining water and use the lentils as needed.
  5. For pressure cooker, add lentils and water, seal the lid, and cook on manual setting for the specified time based on the type of lentil.
  6. For slow cooker, add lentils and water, then cook on low for 6-8 hours or high for 3-5 hours.
