Ingredients

The lentils

  • 1 cup uncooked French green or black lentils
  • medium pot water

Lemon-Herb Dressing (optional)

  • 3 tablespoons fresh lemon juice
  • 1 tablespoon extra-virgin olive oil
  • 1 teaspoon sea salt
  • ¼ teaspoon Dijon mustard
  • to taste freshly ground black pepper
  • ½ cup chopped fresh parsley
  • pinch red pepper flakes (optional)

Instructions

  1. Rinse the lentils in a fine mesh sieve and pick over them to remove any debris.
  2. In a medium saucepan, combine the lentils and enough water to cover them, then bring to a boil.
  3. Cover the pot, reduce the heat, and simmer for 17 to 20 minutes until the lentils are tender but not mushy.
  4. Drain any excess water and let the lentils cool.
  5. To make the dressing, transfer the cooked lentils to a bowl and stir in lemon juice, olive oil, salt, mustard, and pepper.
  6. Add chopped parsley and red pepper flakes if using, then serve or store in the fridge.
