How to Cook Lentils

Instructions
- Rinse the lentils in a fine mesh sieve and pick over them to remove any debris.
- In a medium saucepan, combine the lentils and enough water to cover them, then bring to a boil.
- Cover the pot, reduce the heat, and simmer for 17 to 20 minutes until the lentils are tender but not mushy.
- Drain any excess water and let the lentils cool.
- To make the dressing, transfer the cooked lentils to a bowl and stir in lemon juice, olive oil, salt, mustard, and pepper.
- Add chopped parsley and red pepper flakes if using, then serve or store in the fridge.
