Ingredients
The lentils

dry lentils (any variety)
The seasoning

salt

piece
bay leaf (optional)

clove
garlic (peeled but left whole, optional)
1-2
teaspoons
extra-virgin olive oil (optional)
Instructions
1. Bring a pot of water to boil, leaving room at the top.
2. Sort through the lentils to remove any debris and rinse them until the water runs clear.
3. Add the rinsed lentils to the boiling water along with the salt and optional ingredients.
4. Cook according to the type of lentils: 6 minutes for red, 13 minutes for green, 16 minutes for black, and 18 minutes for French green lentils.
5. Test the lentils for doneness, adjusting the cooking time as necessary.
6. Strain off excess water and return the lentils to the pot. Discard the bay leaf and smash the garlic if used.
7. Season with additional salt or olive oil if desired.
