Crispy Tofu

Ingredients

The tofu

  • 1 block extra firm tofu (15 ounces)

The oil

  • 1 ½ tablespoons canola oil or grapeseed oil

Instructions

  1. Freeze the tofu for at least 3 hours or up to 3 months.
  2. When ready to cook, unwrap the tofu and discard any frost or ice.
  3. Boil water in a pot large enough to submerge the tofu, then gently add the frozen tofu.
  4. Simmer the tofu for 15 minutes, flipping halfway through, then remove and let cool.
  5. Cut the tofu into ½ to ¾ inch cubes.
  6. Heat oil in a wok or skillet over medium-high heat until hot.
  7. Add tofu pieces in a single layer and cook for about 5 minutes on one side.
  8. Flip the tofu and brown all sides for a total of 10-12 minutes.
  9. Remove from the pan and use as desired.
