Ingredients

Dough

  • 2 ¼ teaspoon active dry yeast
  • 2 1/8 cup all-purpose flour
  • ¾ cup warm water
  • 1 teaspoon salt
  • 1 ½ teaspoon olive oil

Sauce

  • 1 15-ounce can whole tomatoes
  • 2 tablespoon olive oil
  • 2 large garlic cloves
  • 4 large fresh basil leaves
  • ¼ teaspoon sugar

Assemble

  • 2 tablespoon cornmeal
  • 6-8 ounces mozzarella
  • 1 large tomato

Instructions

  1. Combine yeast, 1 tablespoon of flour, and ¼ cup warm water; let it sit until foamy.
  2. Mix in the remaining flour, warm water, salt, and olive oil until combined.
  3. Knead the dough until smooth and elastic, then let it rise in a warm place for 60 to 90 minutes.
  4. While the dough rises, puree the tomatoes and cook garlic in olive oil until fragrant.
  5. Add pureed tomatoes, sugar, and basil to the pot; simmer for 20-30 minutes until reduced.
  6. Preheat the oven to 500°F and prepare a baking tray with cornmeal.
  7. Shape the dough on the tray, spread sauce, and top with mozzarella and optional tomato slices.
  8. Bake for 12-16 minutes until the crust is golden and cheese is bubbly.
  9. Allow to cool for 5 minutes before slicing and serving.
