Ingredients

The marinade

  • 8 ounces Mexican beer
  • ¼ cup lime juice
  • 1 large onion, thinly sliced
  • ½ bunch cilantro, chopped
  • 1 tablespoon seasoned salt
  • 2 teaspoons ground cumin
  • 1 teaspoon salt
  • 1 teaspoon black pepper

The grill

  • 1 bunch green onions
  • 4 pieces Caribe chiles or other yellow chiles
  • 4 pounds flank steak or skirt steak

For serving

  • to taste corn tortillas
  • to taste quesadillas
  • to taste guacamole

Instructions

  1. Combine beer, lime juice, onion, cilantro, seasoned salt, cumin, salt, and pepper in a large dish or bag.
  2. Add the steak and marinate for at least 1 hour, up to 2 hours, then let it sit at room temperature for 30 minutes before grilling.
  3. Preheat the grill over high heat for 10 minutes, clean and oil the grate.
  4. Grill green onions and chiles for about 5 minutes until brown spots form.
  5. Remove the vegetables and grill the steak over direct heat, turning occasionally until it reaches your desired doneness.
  6. Let the steak rest for 5 minutes, then slice thinly against the grain.
  7. Serve with tortillas, quesadillas, guacamole, grilled green onions, and chiles.
