All-Purpose Pizza Dough

Instructions
- Whisk honey, active dry yeast, and water in the bowl of a stand mixer until dissolved.
- Mix in whole wheat flour and Italian 00 flour or bread flour until it resembles pancake batter.
- Add kosher salt and remaining flour, mixing until a ball of dough forms.
- Knead the dough on high speed until smooth and sticky, about 8–10 minutes.
- Cover the bowl with plastic wrap and let it sit at room temperature for 5 hours, then chill for at least 12 hours.
- Divide the dough into 4 portions and form into balls, placing them on a lightly oiled baking sheet.
- Cover with an upturned baking sheet and let sit at room temperature for 4 hours.
