All-Purpose Pizza Dough

Ingredients

  • 2 tsp honey
  • ½ tsp active dry yeast
  • cup whole wheat flour
  • 6 cups Italian 00 flour or bread flour
  • 3 Tbsp kosher salt (Diamond Crystal) or 1 Tbsp. plus 2¼ tsp. (Morton)
  • as needed none extra-virgin olive oil (for pan)

Instructions

  1. Whisk honey, active dry yeast, and water in the bowl of a stand mixer until dissolved.
  2. Mix in whole wheat flour and Italian 00 flour or bread flour until it resembles pancake batter.
  3. Add kosher salt and remaining flour, mixing until a ball of dough forms.
  4. Knead the dough on high speed until smooth and sticky, about 8–10 minutes.
  5. Cover the bowl with plastic wrap and let it sit at room temperature for 5 hours, then chill for at least 12 hours.
  6. Divide the dough into 4 portions and form into balls, placing them on a lightly oiled baking sheet.
  7. Cover with an upturned baking sheet and let sit at room temperature for 4 hours.
