Instructions
- Preheat the oven to 300°F.
- Beat the egg whites until stiff peaks form.
- Gradually blend in the coconut sugar, cinnamon, and lemon zest into the whipped egg whites.
- Set aside about 1 cup of the whipped egg mixture for topping the cookies.
- Grind the blanched almonds in a food processor until they are mostly small pieces.
- Fold the ground almonds and almond flour into the egg mixture.
- Use a size 40 scoop to form balls of dough on a parchment-lined cookie sheet.
- Flatten each ball with your hand and top with a dollop of the reserved whipped egg mixture.
- Bake for about 30 minutes.
