Maple Cinnamon Star Cookies

Instructions
- Whisk together the flour, cinnamon, baking powder, and salt in a bowl.
- In a separate bowl, beat the butter and sugar until smooth, then add the egg, maple extract, and vanilla extract.
- Combine the dry ingredients with the wet ingredients and mix until a soft dough forms.
- Divide the dough into two pieces and roll each out to about ¼ inch thick.
- Chill the rolled-out dough for at least 1-2 hours.
- Preheat the oven to 350°F (177°C) and prepare baking sheets.
- Cut the chilled dough into star shapes and place them on the baking sheets.
- Press sprinkles into the cookies before baking.
- Bake for 11-12 minutes until lightly browned, then cool on a wire rack.
- Melt the white chocolate and dip the cooled cookies in it, allowing the chocolate to set.
