Protein Donuts (Double Chocolate)

Ingredients

The donuts

  • ½ cup Wholesome Yum Blanched Almond Flour
  • ½ cup Besti Monk Fruit Allulose Blend
  • ¼ cup Whey protein powder
  • 3 tbsp Dutch processed cocoa powder
  • 2 ½ tbsp Psyllium husk powder
  • 1 ½ tsp Baking powder
  • ¼ tsp Sea salt
  • 3 tbsp Unsalted butter (melted)
  • 2 large Egg whites (at room temperature)
  • ½ tsp Vanilla extract
  • ¼ cup Boiling water

The glaze

  • cup Sugar-Free Milk Chocolate Chips
  • 1 tbsp Coconut oil (melted)

Instructions

  1. Preheat the oven to 350°F (177°C) and grease a nonstick metal donut pan.
  2. In a large bowl, mix the almond flour, Besti, protein powder, cocoa powder, psyllium, baking powder, and sea salt.
  3. Stir in the melted butter, egg whites, and vanilla until a uniform dough forms.
  4. Pour in the boiling water while mixing with a hand mixer on low speed for about a minute. Let the dough sit for 5 minutes to thicken.
  5. Divide the dough into six sections, roll into logs, and place into the greased donut pan.
  6. Bake for 15-18 minutes until dark golden brown and a toothpick comes out almost clean. Cool in the pan for 15 minutes.
  7. Run a spatula around the edges to release the donuts and cool completely on a rack.
  8. For the glaze, melt chocolate chips and coconut oil in a double boiler, stir until smooth, and let cool slightly.
  9. Dip the rounded side of each donut into the glaze and swirl to coat. Allow the glaze to set.
