Instructions
- Heat water to 110-115 degrees, dissolve sugar, and stir in yeast; let bloom.
- In a mixer bowl, combine flour, salt, nutmeg, milk, butter, eggs, and yeast mixture; mix until dough forms.
- Transfer dough to an oiled bowl, cover, and let rise until doubled in size, about 2 hours.
- Prepare the cinnamon filling by mixing butter, brown sugar, and cinnamon in a bowl.
- Roll out the dough into a rectangle, sprinkle with filling, and roll into a cylinder.
- Pinch seams to form a ring, cover, and let proof until doubled in size, about 45 minutes to 1 hour.
- Make the icing by combining powdered sugar, almond extract, and milk until smooth.
- Preheat oven to 350 degrees and bake the cake until golden brown, about 25 to 30 minutes.
- Insert the plastic baby into the bottom of the cake, drizzle with icing, and sprinkle with colored sugars.
