Ingredients

The dip

  • 5 heads garlic
  • 2 tbsp olive oil
  • 1 block (8oz) cream cheese, softened
  • 1 cup plain Greek yogurt
  • ¼ cup mayonnaise
  • cup shredded mozzarella cheese
  • cup parmesan cheese
  • ¼ cup parsley, chopped
  • ½ tsp garlic powder
  • ½ tsp salt

To serve

  • as needed garlic bread dippers, crostini, toasted baguette, or chips

Instructions

  1. 1. Preheat the oven to 425°F and prepare the garlic by slicing off the tops and drizzling with olive oil, then wrap in foil and bake for 45 minutes until soft.
  2. 2. Let the garlic cool for at least 15 minutes, then reduce the oven temperature to 350°F.
  3. 3. In a large bowl, beat together the softened cream cheese, Greek yogurt, and mayonnaise.
  4. 4. Squeeze the roasted garlic cloves into the mixture and mix well.
  5. 5. Stir in 1 cup of mozzarella, 1 cup of parmesan, parsley, garlic powder, and salt until combined.
  6. 6. Pour the mixture into a small baking dish, top with remaining cheese and a bit more parsley.
  7. 7. Bake for 20 minutes, then broil for 3-4 minutes until golden brown, watching closely to prevent burning.
  8. 8. Let cool for 10 minutes before serving.
