Lemon Roasted Chicken and Cauliflower

Ingredients

  • 1 whole chicken (cut into parts)
  • 1 head cauliflower (cut into florets)
  • 1 whole lemon (thinly sliced)
  • 6 cloves garlic (minced)
  • 1 teaspoon lemon pepper
  • ½ teaspoon salt
  • 2 tablespoons olive oil
  • 2 sprigs rosemary
  • 1 cup water

Instructions

  1. Preheat the oven to 450°F.
  2. In a large roasting pan, arrange the chicken parts and cauliflower.
  3. Drizzle olive oil over the chicken and cauliflower, and place rosemary sprigs on top.
  4. Add lemon slices, garlic, lemon pepper, and salt to the dish.
  5. Pour water into the bottom of the roasting pan.
  6. Bake until the chicken reaches an internal temperature of 170-175°F, about 30 minutes.
