Instructions
- Heat the waffle iron over medium heat.
- Blend the oats into a fine powder and mix with baking powder, cinnamon, and salt in a bowl.
- Blend the cottage cheese, eggs, maple syrup, and vanilla until smooth.
- Combine the wet and dry ingredients, mixing until just combined, and fold in blueberries if using.
- Spray the waffle iron with cooking spray and pour in ½ cup of batter.
- Cook for 6 minutes until golden, then transfer to a wire rack to cool.
