Ingredients

  • 2 cups old-fashioned oats
  • 1 tsp baking powder
  • ½ tsp cinnamon
  • ¼ tsp fine sea salt
  • 2 cups whole milk cottage cheese
  • 6 large eggs
  • 3 tbsp pure maple syrup
  • 1 ½ tsp vanilla extract
  • 1 cup fresh or frozen blueberries

Instructions

  1. Heat the waffle iron over medium heat.
  2. Blend the oats into a fine powder and mix with baking powder, cinnamon, and salt in a bowl.
  3. Blend the cottage cheese, eggs, maple syrup, and vanilla until smooth.
  4. Combine the wet and dry ingredients, mixing until just combined, and fold in blueberries if using.
  5. Spray the waffle iron with cooking spray and pour in ½ cup of batter.
  6. Cook for 6 minutes until golden, then transfer to a wire rack to cool.
