  • 6 to 8 apples Cores and peels (ideally organic)
  • 2 tablespoons Sugar
  • to cover water Water

Instructions

  1. Place the cores and peels in a large jar.
  2. Cover the scraps with water and stir in the sugar.
  3. Cover the jar with a paper towel or butter muslin and secure it.
  4. Let the mixture soak for 2 weeks at room temperature, then strain out the liquid.
  5. Return the liquid to the jar, cover it again, and leave it for 4 more weeks, stirring daily.
  6. Taste the vinegar and transfer to a covered bottle for storage if it has the desired acidity.
