Homemade Apple Cider Vinegar

Instructions
- Place the cores and peels in a large jar.
- Cover the scraps with water and stir in the sugar.
- Cover the jar with a paper towel or butter muslin and secure it.
- Let the mixture soak for 2 weeks at room temperature, then strain out the liquid.
- Return the liquid to the jar, cover it again, and leave it for 4 more weeks, stirring daily.
- Taste the vinegar and transfer to a covered bottle for storage if it has the desired acidity.
