Ingredients

The dough

  • 1 ¾ cups whole wheat pastry flour
  • ½ cup toasted wheat germ
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • scant ½ teaspoon fine grain sea salt
  • ½ cup unsalted butter
  • 1 cup natural cane sugar (or brown sugar)
  • 2 large eggs
  • 2 teaspoons vanilla extract

Add-ins

  • cup banana chips, loosely chopped
  • 1 cup chocolate chips
  • cup toasted walnuts, chopped

Instructions

  1. Preheat the oven to 375°F and line two baking sheets with parchment paper.
  2. In a bowl, whisk together the flour, wheat germ, baking soda, baking powder, and salt.
  3. In a large bowl or stand mixer, beat the butter until fluffy, then mix in the sugar until thick and creamy.
  4. Add the eggs one at a time, mixing well after each addition, and then stir in the vanilla.
  5. Gradually add the flour mixture in two increments, mixing gently between each addition.
  6. Fold in the banana chips, chocolate chips, and walnuts until evenly distributed.
  7. Drop heaping tablespoons of dough onto the prepared baking sheets, spacing them 2 inches apart.
  8. Bake for 7-8 minutes until barely golden, then cool on racks.
