Vanilla Roasted Walnuts

Instructions
- 1. Place walnuts and olive oil in a large cast iron skillet and turn the heat to high.
- 2. When you hear a sizzle, reduce the heat to medium or low.
- 3. Toast the walnuts for a few minutes until they smell nutty.
- 4. Add agave nectar or honey and stir for 1-2 minutes, then add salt.
- 5. Scrape the seeds from the vanilla beans and stir them into the walnuts.
- 6. Remove the walnuts from the pan and add a dash of cinnamon if desired.
- 7. Serve the walnuts.
