Ingredients

The popcorn

The caramel mixture

  • 1 cup brown sugar
  • 2 tablespoons light Karo syrup
  • ½ cup butter (1 stick)
  • 1 teaspoon vanilla extract
  • 12 large marshmallows (3.6 ounces)

Instructions

  1. Pop the popcorn and transfer it to a large, heat-safe bowl, picking out any unpopped kernels.
  2. In a heavy saucepan, combine the brown sugar, Karo syrup, and butter.
  3. Bring to a boil over medium heat, then reduce heat to medium-low and cook for about 7 minutes.
  4. Add the marshmallows and vanilla, stirring until the marshmallows are melted.
  5. Remove from heat and pour the mixture over the popcorn, stirring quickly to coat.
