Lemon Garlic Roasted Asparagus

Ingredients

The asparagus

  • 1 bunch asparagus

The seasoning

  • 2 cloves garlic
  • 1 Tbsp olive oil
  • tsp salt
  • tsp freshly cracked black pepper
  • 1 fresh lemon

Instructions

  1. Preheat the oven to 400ºF.
  2. Rinse the asparagus and trim off the dry or woody ends.
  3. Mince the garlic cloves.
  4. Line a baking sheet with parchment paper, if desired.
  5. Place the trimmed asparagus and minced garlic on the baking sheet.
  6. Drizzle olive oil over the asparagus and add salt and pepper.
  7. Toss the asparagus to coat with the oil and seasonings.
  8. Roast in the preheated oven for 20 minutes, stirring halfway through.
  9. While roasting, zest the lemon and cut it into wedges.
  10. Once roasted, add lemon zest and a couple squeezes of lemon juice to the asparagus.
  11. Toss to coat and adjust seasoning if needed.
  12. Serve with remaining lemon wedges.
