Instructions
- Make the marinade by whisking together all marinade ingredients in a bowl and set aside.
- Slice the pork shoulder into ½ inch thick slices and flatten them to ¼ inch pieces using cling wrap and a meat tenderizer.
- Marinate the meat in the marinade for at least 1 hour in the fridge.
- Preheat the oven to 400°F after marinating.
- Thread the marinated pork onto a skewer, layering tightly, and place it on a baking sheet lined with foil.
- Bake for 15 minutes at 400°F, then lower the temperature to 375°F and continue baking for 1 to 1 hour 45 minutes until the internal temperature reaches 145-150°F, basting every half hour.
- Let the pork cool for 10-15 minutes before slicing.
- In a frying pan over medium-high heat, crisp the sliced pork in batches for about 5 minutes each.
- Season the crispy pork with salt, lemon juice, and dried oregano before serving.
