Crispy Pork Gyro

Ingredients

The meat

  • 2.5-3 lbs pork shoulder

The marinade

  • 2 tsp salt
  • ¾ tsp pepper
  • 4 large garlic cloves, pressed
  • tbsp dried oregano
  • 1 tbsp onion powder
  • 1 tbsp garlic powder
  • 1 whole lemon, juiced
  • 4 tbsp olive oil

Instructions

  1. Make the marinade by whisking together all marinade ingredients in a bowl and set aside.
  2. Slice the pork shoulder into ½ inch thick slices and flatten them to ¼ inch pieces using cling wrap and a meat tenderizer.
  3. Marinate the meat in the marinade for at least 1 hour in the fridge.
  4. Preheat the oven to 400°F after marinating.
  5. Thread the marinated pork onto a skewer, layering tightly, and place it on a baking sheet lined with foil.
  6. Bake for 15 minutes at 400°F, then lower the temperature to 375°F and continue baking for 1 to 1 hour 45 minutes until the internal temperature reaches 145-150°F, basting every half hour.
  7. Let the pork cool for 10-15 minutes before slicing.
  8. In a frying pan over medium-high heat, crisp the sliced pork in batches for about 5 minutes each.
  9. Season the crispy pork with salt, lemon juice, and dried oregano before serving.
