Ingredients

The steak and marinade

  • 1 pound Angus sirloin steak
  • ¼ cup soy sauce
  • cup dry sherry
  • cup beef broth
  • 1 tablespoon sesame oil
  • 1 tablespoon sugar
  • 1 tablespoon ground black pepper
  • 2 tablespoons cornstarch

The vegetables

  • 3 pieces bell peppers
  • 1 medium onion
  • 2 cloves garlic
  • 2 teaspoons ginger

For frying

  • 1 tablespoon oil

Instructions

  1. Marinate the sliced steak with soy sauce, dry sherry, beef broth, sesame oil, sugar, black pepper, and cornstarch for 10 minutes or up to 24 hours.
  2. Heat oil in a wok or non-stick pan over medium heat and sear the marinated beef on all sides, then remove from the pan.
  3. In the same pan, add more oil and sauté the sliced bell peppers and onion for 3-4 minutes, then add them to the bowl with the beef.
  4. Return the wok to heat until smoking, then add the beef, vegetables, minced garlic, and ginger. Stir-fry for several minutes and add the reserved marinade, cooking for an additional 1-2 minutes.
  5. Remove from heat and serve immediately.
