Ingredients

The salad

  • 1 cup pecan halves
  • 1 pound seedless red grapes
  • 1 pound seedless green grapes
  • 2 medium sweet-crisp apples

The dressing

  • 4 ounces reduced fat cream cheese
  • ½ cup plain nonfat Greek yogurt
  • 2 tablespoons granulated sugar
  • 1 tablespoon honey or pure maple syrup
  • 2 teaspoons vanilla extract
  • ½ teaspoon ground cinnamon

Instructions

  1. Preheat the oven to 350°F and toast the pecans on a baking sheet for 8 to 10 minutes until golden.
  2. In a large bowl, beat together the cream cheese, yogurt, sugar, honey, vanilla, and cinnamon until smooth.
  3. Add the grapes and diced apples to the bowl, along with about ⅔ of the chopped pecans, and stir to combine.
  4. Top with the remaining pecans and serve immediately or refrigerate until ready.
