Ingredients

The pudding

  • 1 cup almond milk
  • 2 tbsp peanut butter
  • 2 tsp cacao powder
  • ¼ tsp vanilla extract
  • tsp cinnamon
  • ¼ cup chia seeds
  • to taste sweetener of choice

Optional toppings

  • to taste fresh or frozen berries
  • to taste coconut flakes
  • to taste chopped nuts and/or seeds
  • to taste nut butter

Instructions

  1. Combine all ingredients except chia seeds and toppings in a mason jar and whisk together.
  2. Add chia seeds, cover the jar, and shake well.
  3. Let it sit for a few minutes, then shake again.
  4. Repeat the shaking and letting sit until the chia seeds start to absorb the liquid.
  5. Give it a final shake and transfer to the fridge to set, ideally overnight.
  6. When ready to eat, add your favorite toppings.
