Ingredients

Tang Zhong (Water Roux)

  • 1 oz bread flour
  • 5 oz water

Wet Ingredients

  • 2 oz water
  • 1 large egg, lightly beaten
  • 2 ¾ oz tangzhong (water roux)

Dry Ingredients

  • 1 teaspoon salt
  • 1 oz sugar
  • 1 ½ cups bread flour
  • ¾ cup all-purpose flour
  • 2 tablespoons baking milk powder
  • 2 teaspoons yeast

Other Ingredients

  • 3 tablespoons unsalted butter, cubed
  • 1 egg yolk
  • 1 teaspoon milk, for egg wash
  • 1 cup Mozzarella cheese
  • 1 ½ tablespoons chopped parsley

Instructions

  1. Prepare the tangzhong by mixing bread flour and water in a saucepan, then heat until it becomes paste-like.
  2. Remove from heat when the mixture reaches 149°F (65°C) and let it cool.
  3. In a mixer, combine wet ingredients, salt, sugar, dry ingredients, and yeast, mixing until a dough forms.
  4. Slowly incorporate butter into the dough until it is no longer sticky, then knead until passing the windowpane test.
  5. Shape the dough into a round, place it in a greased bowl, cover, and let it rise until doubled in size.
  6. Divide the dough into 9 portions, shape into balls, and let them rest before rolling into logs.
  7. Preheat the oven and prepare an egg wash, then brush it on the dough, sprinkle with cheese and parsley, and bake.
