Vegan Pine Nut Oat Cookies

Ingredients

  • ¼ cup aquafaba
  • ½ cup packed brown sugar
  • ½ cup vegan margarine sticks
  • 1 teaspoon vanilla
  • ¾ cup whole wheat flour
  • ¼ cup all purpose flour
  • ¾ cup old-fashioned oats
  • ½ teaspoon baking soda
  • a pinch salt
  • ½ cup pine nuts

Instructions

  1. Mix aquafaba and brown sugar in a bowl with an electric mixer until thick and peaks form.
  2. Preheat the oven to 350°F.
  3. Add vegan margarine and vanilla to the mixture and mix gently until combined.
  4. Incorporate whole wheat flour, all-purpose flour, oats, baking soda, and salt, mixing gently until well combined.
  5. Stir in the pine nuts.
  6. Line baking sheets with parchment paper.
  7. Roll dough into 1-inch circles and place on the baking sheet, spacing them 2 inches apart.
  8. Bake for 8-10 minutes until slightly golden and firm.
  9. Remove from the oven and store in an airtight container.
