Instructions
- Mix aquafaba and brown sugar in a bowl with an electric mixer until thick and peaks form.
- Preheat the oven to 350°F.
- Add vegan margarine and vanilla to the mixture and mix gently until combined.
- Incorporate whole wheat flour, all-purpose flour, oats, baking soda, and salt, mixing gently until well combined.
- Stir in the pine nuts.
- Line baking sheets with parchment paper.
- Roll dough into 1-inch circles and place on the baking sheet, spacing them 2 inches apart.
- Bake for 8-10 minutes until slightly golden and firm.
- Remove from the oven and store in an airtight container.
