Pea Soup

Ingredients

The soup base

  • 2 tbsp Olive oil
  • 1 medium Onion (diced)
  • 2 cloves Garlic (minced)
  • 24 oz Peas (fresh or frozen, ~5 cups)
  • 3 cups Vegetable stock
  • ¼ cup Heavy cream

Seasoning

  • ¼ tsp Sea salt (to taste)
  • ¼ tsp Black pepper (to taste)

Instructions

  1. Heat olive oil in a large pot over medium heat until shimmering.
  2. Add diced onion and sauté until softened, about 5 minutes.
  3. Stir in minced garlic and cook for 1 minute until fragrant.
  4. Add peas and vegetable stock, stirring well.
  5. Bring to a boil, then reduce heat and simmer for 15 minutes.
  6. Remove from heat and cool for a few minutes.
  7. Blend the soup until smooth, working in batches if necessary.
  8. Return the blended soup to the pot over medium heat.
  9. Stir in heavy cream and season with salt and pepper to taste.
  10. Heat until just starting to bubble, then serve.
