Pea Soup

Instructions
- Heat olive oil in a large pot over medium heat until shimmering.
- Add diced onion and sauté until softened, about 5 minutes.
- Stir in minced garlic and cook for 1 minute until fragrant.
- Add peas and vegetable stock, stirring well.
- Bring to a boil, then reduce heat and simmer for 15 minutes.
- Remove from heat and cool for a few minutes.
- Blend the soup until smooth, working in batches if necessary.
- Return the blended soup to the pot over medium heat.
- Stir in heavy cream and season with salt and pepper to taste.
- Heat until just starting to bubble, then serve.
