Ingredients

The salad

  • 8 oz fresh cooked lobster, chopped
  • 3 ½ cups chopped asparagus
  • ½ cup cherry tomatoes, quartered
  • 2 tbsp diced red onion
  • 1 leaf basil, chopped

The dressing

  • 4 tsp extra virgin olive oil
  • 2 tbsp fresh lemon juice
  • ¼ tsp kosher salt
  • to taste black pepper

Instructions

  1. Boil water in a medium pot and cook the asparagus for 2 to 3 minutes until tender yet firm.
  2. Drain the asparagus and run it under cold water to stop further cooking.
  3. In a small bowl, mix the olive oil, lemon juice, salt, and pepper to create the dressing.
  4. In a large bowl, combine the asparagus, lobster, cherry tomatoes, red onion, basil, and dressing.
  5. Divide the salad into two bowls and serve immediately.
