Baked Apple Cups

Instructions
- Preheat the oven to 350°F.
- Thaw the puff pastry dough and cut it into six pieces, discarding the remaining two pieces.
- Brush the pastry with melted butter and place it into greased muffin tins.
- Sprinkle the pastry with refined sugar.
- Combine the remaining ingredients, reserving 1 teaspoon of brown sugar.
- Divide the apple mixture between the muffin tins and sprinkle with the reserved brown sugar.
- Bake for 25-30 minutes or until the pastry is golden.
- Serve with vanilla ice cream.
