Mexican Street Corn

Ingredients

The corn

  • 4 ears corn

The sauce

  • ½ cup mayonnaise
  • ½ cup grated Parmesan cheese
  • 2 limes halved
  • to taste Tajin seasoning or chili powder

Instructions

  1. Boil 4 quarts of water in a large pot and add the corn, cooking until bright yellow and tender, about 4 minutes.
  2. Remove the corn from the pot and let it cool slightly, then skewer with sticks if desired.
  3. Rub each ear of corn with half a lime.
  4. Coat the corn with 2 tablespoons of mayonnaise using a spatula.
  5. Sprinkle 2 tablespoons of Parmesan cheese over the corn and season with Tajin or chili powder to taste.
  6. Repeat the process for the remaining ears of corn.
