Watermelon Radish & Goat Cheese Salad

Ingredients

  • 1 unit shallot or half of a small red onion
  • 2 to 3 tablespoons white balsamic vinegar
  • kosher salt
  • 2 to 3 unit watermelon radishes
  • 2 to 3 unit oranges, clementines, grapefruit, etc.
  • a handful walnuts, toasted and chopped
  • to taste goat cheese
  • to taste olive oil
  • optional chives, minced

Instructions

  1. Mince the shallot and place it in a bowl with vinegar and a pinch of salt, then set aside.
  2. Prepare the radishes by cutting off one end and slicing thinly using a mandoline. Arrange the slices on a platter and season with salt.
  3. Prepare the oranges by cutting off the ends, removing the skin, and slicing between the membranes to get individual segments. Squeeze any remaining juice over the radishes.
  4. Top the radishes with orange segments, walnuts, and goat cheese.
  5. Drizzle the shallot mixture and olive oil over the salad, and add chives if desired.
  6. Let the salad sit for a few minutes before serving.
