Watermelon Radish & Goat Cheese Salad

Instructions
- Mince the shallot and place it in a bowl with vinegar and a pinch of salt, then set aside.
- Prepare the radishes by cutting off one end and slicing thinly using a mandoline. Arrange the slices on a platter and season with salt.
- Prepare the oranges by cutting off the ends, removing the skin, and slicing between the membranes to get individual segments. Squeeze any remaining juice over the radishes.
- Top the radishes with orange segments, walnuts, and goat cheese.
- Drizzle the shallot mixture and olive oil over the salad, and add chives if desired.
- Let the salad sit for a few minutes before serving.
