Instructions
- Preheat the air fryer at 375°F for 5 minutes.
- Line the air fryer basket with foil and spray with nonstick cooking spray.
- In a large mixing bowl, combine the onion, carrot, garlic, ketchup, mustard, salt, pepper, beaten eggs, cottage cheese, and Worcestershire sauce.
- Mix in the ground beef and bread crumbs until well combined.
- Form 2 loaves and place them in the air fryer basket.
- Cook in the air fryer at 375°F for 20 minutes.
- Combine the sauce ingredients in a small saucepan and cook over medium-low heat for 4 minutes, stirring often.
- Spoon half of the sauce over the meatloaves and cook for an additional 10 minutes.
- Remove the meatloaves, place on a serving tray, and spoon the remaining sauce over them. Let rest for 5 minutes before serving.
