Ingredients

  • 1 cup rolled oats
  • 2.5 cups plain, unsweetened almond milk
  • 2 tablespoons maple syrup
  • 1 medium banana
  • 1 teaspoon vanilla extract

  • 1 tablespoon chia seeds

Instructions

  1. Combine all ingredients except for ½ cup of almond milk in a medium saucepan.
  2. Heat on medium/high until boiling, then reduce to low/medium and simmer for about 5 minutes, stirring consistently.
  3. Add the remaining ½ cup of almond milk and stir again, letting it simmer for 1-2 more minutes.
  4. Serve topped with walnuts, banana slices, and banana bread chunks if desired.
