Big-O Bacon Burgers

Ingredients

The burger mixture

  • ½ pound cremini mushrooms, finely chopped
  • 4 ounces bacon, frozen and cross-cut into small pieces
  • 1 pound ground beef
  • teaspoons kosher salt
  • to taste freshly ground black pepper

Cooking fat

  • 2 tablespoons ghee, lard, or fat of choice, divided

Instructions

  1. Heat 1 tablespoon of ghee in a cast-iron skillet over medium heat and sauté the mushrooms until the liquid has cooked off. Set aside to cool.
  2. Pulse the frozen bacon pieces in a food processor until they resemble ground meat.
  3. In a large bowl, combine the ground beef, bacon, and mushrooms, and season with salt and pepper. Mix gently with your hands.
  4. Divide the mixture into four portions and shape each into ¾-inch-thick patties.
  5. Melt the remaining tablespoon of ghee in the skillet over medium heat and fry the patties, turning once. Cook for about 3 minutes per side.
  6. Transfer the patties to a wire rack to drain excess fat.
  7. Serve with your favorite toppings, wrapped in lettuce leaves or Portobello mushrooms.
