Homemade Vegan Dulce De Leche Sauce

tapioca starch (optional)
Instructions
- Whisk together coconut milk and coconut sugar in a small pot over medium heat until the sugar dissolves.
- Add salt and vanilla, stirring again. If desired, whisk in tapioca starch for thickness.
- Increase heat to medium-high and bring to a soft boil, letting it boil for about 20 minutes until reduced to about one cup, stirring often.
- Remove from heat, transfer to glass jars, let cool, then store in the fridge.
- Reheat before serving as needed.
