Homemade Vegan Dulce De Leche Sauce

Ingredients

  • 10 ounce coconut milk
  • ⅓ to ½ cup coconut sugar
  • ¼ teaspoon sea salt
  • ½ teaspoon vanilla bean or pure vanilla extract
  • ½ teaspoon tapioca starch (optional)

Instructions

  1. Whisk together coconut milk and coconut sugar in a small pot over medium heat until the sugar dissolves.
  2. Add salt and vanilla, stirring again. If desired, whisk in tapioca starch for thickness.
  3. Increase heat to medium-high and bring to a soft boil, letting it boil for about 20 minutes until reduced to about one cup, stirring often.
  4. Remove from heat, transfer to glass jars, let cool, then store in the fridge.
  5. Reheat before serving as needed.
