Ingredients

  • 8 sheets toasted nori
  • 1 pound cooked lump crab meat
  • 2 tablespoons Paleo mayonnaise
  • ½ teaspoon red pepper flakes (optional)
  • Juice from ½ medium lime
  • Kosher salt
  • Freshly ground black pepper
  • 1 large Hass avocado (pitted, peeled, and thinly sliced)
  • 2 small Japanese or Persian cucumbers (cut into matchsticks)
  • Handful of radish sprouts or micro greens
  • 2 tablespoons toasted sesame seeds (optional)

Instructions

  1. Toast the nori sheets over a gas burner or in the oven until they turn bright green.
  2. Cut each toasted nori sheet in half width-wise to create 16 pieces.
  3. In a bowl, combine crab meat, scallions, mayonnaise, red pepper flakes (if using), and lime juice.
  4. Season the mixture with salt and pepper to taste and mix well.
  5. To assemble, hold a piece of nori shiny-side down and scoop 2 tablespoons of the crab mixture onto the left side.
  6. Top with a slice of avocado, cucumber slices, and sprouts.
  7. Fold the bottom left corner of the nori over the filling and wrap the long part around to form a cone.
  8. Sprinkle with toasted sesame seeds if desired and eat immediately.
