Asian Brined Pork Chops

Ingredients

The pork chops

  • 4 pieces bone-in pork chops, ¾-inch thick
  • teaspoon salt, or to taste
  • 1 tablespoon cooking oil

The brine

  • ¾ cup mirin
  • ½ cup low sodium soy sauce
  • 3 ounces fresh ginger, thinly sliced
  • 6-8 pieces small dried chilies
  • 1 piece orange, thinly sliced
  • tablespoons sesame oil
  • cups cold water

Garnish (optional)

  • to taste mint leaves

Instructions

  1. Season the pork chops lightly with salt.
  2. Mix all brine ingredients in a container that fits the pork chops.
  3. Marinate the pork chops in the brine for at least 2 hours, preferably overnight.
  4. Remove the pork chops from the brine and let them come to room temperature, then pat dry.
  5. Heat cooking oil in a non-stick skillet over medium heat.
  6. Pan-fry the pork chops for about 4–5 minutes on each side.
  7. Wrap the pork chops in foil and let them rest for 8–10 minutes before serving.
