Ingredients

  • 1 cup whole wheat flour
  • cup almond flour
  • 2 Tbsp cornstarch
  • 2 Tbsp white sugar
  • 2 Tbsp light brown sugar
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • ½ cup almond butter
  • ¼ cup milk of choice
  • 2 Tbsp water
  • 1 tsp vanilla extract
  • cup chocolate chips

Instructions

  1. Line two cookie sheet trays with parchment paper.
  2. In a large bowl, whisk together the dry ingredients: whole wheat flour, almond flour, cornstarch, sugars, baking powder, baking soda, and salt.
  3. In a separate bowl, mix the wet ingredients: almond butter, milk, water, and vanilla extract.
  4. Combine the wet ingredients with the dry ingredients and stir until just mixed, then fold in the chocolate chips.
  5. Scoop out 2 tablespoons of dough, roll into a ball, and place on the cookie sheet, pressing down slightly.
  6. Continue placing cookies about 2 inches apart, aiming for about 6 cookies per tray.
  7. Chill the trays in the fridge for about 30 minutes.
  8. Preheat the oven to 350°F.
  9. Bake the cookies for 7-10 minutes until the edges are golden brown and the center is still soft.
  10. Allow cookies to cool slightly on the tray before transferring to a wire rack.
