Ingredients

  • 2 large egg whites
  • ¾ cup sugar
  • 3 tablespoons sugar
  • ¼ teaspoon cream of tartar
  • ¼ teaspoon sea salt
  • 1 teaspoon vanilla extract

Instructions

  1. Combine egg whites, sugar, cream of tartar, and salt in a mixing bowl set over a saucepan to create a double boiler.
  2. Bring the water to a boil and whisk the mixture vigorously for 5-7 minutes until stiff peaks form.
  3. Remove the bowl from the heat and stir in the vanilla extract, beating for another minute.
  4. Allow the fluff to cool to room temperature before storing it in the fridge.
