Ingredients

The bars

  • 1 cup walnuts
  • 1 ½ cups old fashioned oats
  • cup vanilla plant protein powder
  • ¼ cup coconut flour
  • ¼ cup hemp seeds
  • 1 tsp cinnamon
  • heaping ¼ tsp fine sea salt
  • 1 cup mashed overripe banana
  • 2 tbsp honey
  • 1 tsp vanilla extract

Optional topping

  • 2 tbsp chocolate chips
  • ½ tsp coconut oil

Instructions

  1. Line a 9x5 inch loaf pan with parchment paper.
  2. Blend walnuts, oats, protein powder, coconut flour, hemp seeds, cinnamon, and salt in a food processor until walnuts are broken down.
  3. Add banana, honey, and vanilla to the mixture and process until a thick dough forms.
  4. Press the mixture evenly into the prepared pan.
  5. Optionally, press chocolate chips into the top or drizzle melted chocolate over the bars.
  6. Freeze for 1-2 hours until set, then slice into 8-10 bars.
