Ingredients

The filling

  • 6 Tbsp. unsalted butter
  • 1 lb. ground beef
  • 3 tsp. kosher salt
  • tsp. freshly ground pepper
  • 1 lb. zucchini, summer squash, or white button mushrooms
  • 1 large onion
  • 1 large carrot
  • 1 large celery stalk
  • 3 cloves garlic
  • cup all-purpose flour
  • cups whole milk
  • cups low-sodium vegetable broth
  • 1 Tbsp. soy sauce
  • ¼ cup finely chopped parsley

The vegetables

  • 2 cups frozen corn, green beans, and/or peas

The topping

  • 4 oz. cheddar cheese
  • 1 32-oz. bag frozen tater tots

Instructions

  1. Preheat the oven to 400°F and melt 1 Tbsp. butter in a skillet.
  2. Cook the ground beef with salt and pepper until browned, then transfer to a baking dish.
  3. In the same pan, cook the chopped zucchini or mushrooms with onion, salt, and pepper until tender.
  4. Transfer the cooked vegetables to the baking dish and mix with the meat.
  5. Melt the remaining butter and cook the carrot, celery, garlic, and onion until tender.
  6. Stir in flour, then gradually add milk, broth, and soy sauce, cooking until thickened.
  7. Mix in chopped parsley and season the sauce as needed.
  8. Pour the sauce over the meat and vegetable mixture, then top with frozen vegetables and cheese.
  9. Arrange tater tots on top and bake until bubbling and golden brown, about 45-50 minutes.
  10. Let cool for 10 minutes before serving, garnished with parsley.
