Ingredients

The fish

  • 4 fillets porgy

The seasoning

  • 4 tsp olive oil
  • to taste salt
  • to taste fresh pepper

The herbs and garnish

  • 4 sprigs fresh herbs (parsley, rosemary, oregano)
  • 1 whole lemon (sliced thin)

The foil

  • 4 pieces heavy duty aluminum foil (about 18 to 20 inches long)

Instructions

  1. Place the fish in the center of the foil and season with salt and pepper, then drizzle with olive oil.
  2. Add a slice of lemon on top of each piece of fish, followed by a sprig of herbs.
  3. Seal the foil packets tightly to prevent steam from escaping.
  4. Preheat half of the grill on high heat with the cover closed.
  5. Once the grill is hot, place the foil packets on the side with the burners off (indirect heat) and close the grill.
  6. Cook for 10 to 15 minutes, or until the fish is opaque and cooked through.
