Instructions
- Combine the coleslaw mix or chopped cabbage and carrots in a medium mixing bowl.
- In a food processor, blend mayonnaise, garlic, chipotle peppers, adobo sauce, rice vinegar, and sugar until smooth.
- Pour the dressing over the coleslaw and toss to coat evenly.
- Add salt to taste and gently stir in chopped green onions.
- Cover and chill until ready to serve, garnishing with cilantro if desired.
