Chipotle Coleslaw

Ingredients

  • 14 ounce coleslaw mix or mixed chopped cabbage, red cabbage, and carrots
  • 1 tablespoon good-quality mayonnaise or vegan mayo
  • 1 clove garlic, peeled and smashed
  • 2 tablespoons chipotle peppers
  • 1 teaspoon adobo sauce
  • 2 tablespoons rice vinegar
  • 2 tablespoons sugar
  • 1 tablespoon salt
  • 2 tablespoons chopped green onions
  • 1 tablespoon chopped cilantro (optional)

Instructions

  1. Combine the coleslaw mix or chopped cabbage and carrots in a medium mixing bowl.
  2. In a food processor, blend mayonnaise, garlic, chipotle peppers, adobo sauce, rice vinegar, and sugar until smooth.
  3. Pour the dressing over the coleslaw and toss to coat evenly.
  4. Add salt to taste and gently stir in chopped green onions.
  5. Cover and chill until ready to serve, garnishing with cilantro if desired.
