Cranberry Feta Cheese Log

Instructions
- Melt butter in a medium pan over medium heat and add frozen cranberries, cooking for 3-4 minutes until softened.
- Stir in salt, pepper, rosemary, and minced garlic, cooking for another 5-6 minutes until the mixture is jammy.
- Allow the cranberry mixture to cool, either at room temperature or in the fridge.
- In a bowl, combine feta cheese, cream cheese, sundried tomatoes, cranberry mixture, and chopped pistachios.
- Shape the mixture into a log using plastic wrap or parchment paper and refrigerate or freeze for 30 minutes.
- Roll the cheese log in chopped pistachios and refrigerate for at least 15 minutes before serving.
- Serve with pita, baguette, or crackers, drizzled with honey if desired.
