Cranberry Feta Cheese Log

Ingredients

  • 1 cup frozen Cape Cod Cranberries
  • 2 tbsp unsalted butter
  • 2 tbsp brown sugar
  • ½ tsp salt
  • ¼ tsp pepper
  • 1 clove garlic, minced
  • 1 tsp fresh rosemary, minced
  • 1 cup feta cheese, crumbled
  • 1 cup plain cream cheese
  • 2 tbsp pistachios, chopped
  • ¼ cup sundried tomatoes, chopped
  • ¾ cup pistachios, chopped (for rolling)
  • 1 each pita (optional for serving)
  • to taste none honey (optional for drizzling)

Instructions

  1. Melt butter in a medium pan over medium heat and add frozen cranberries, cooking for 3-4 minutes until softened.
  2. Stir in salt, pepper, rosemary, and minced garlic, cooking for another 5-6 minutes until the mixture is jammy.
  3. Allow the cranberry mixture to cool, either at room temperature or in the fridge.
  4. In a bowl, combine feta cheese, cream cheese, sundried tomatoes, cranberry mixture, and chopped pistachios.
  5. Shape the mixture into a log using plastic wrap or parchment paper and refrigerate or freeze for 30 minutes.
  6. Roll the cheese log in chopped pistachios and refrigerate for at least 15 minutes before serving.
  7. Serve with pita, baguette, or crackers, drizzled with honey if desired.
