Ingredients

Chocolate Pudding

  • ½ cup granulated sugar
  • ½ cup cocoa powder
  • ¼ cup cornstarch
  • pinch salt
  • 3 cups whole milk or canned full-fat coconut milk
  • 2 ounces semi-sweet or dark chocolate, chopped
  • 3 teaspoons vanilla extract

Cream

  • cups heavy whipping cream
  • 1 tablespoon powdered sugar
  • 2 teaspoons vanilla

Rocky Road Toppings

  • ½ cup roasted peanuts, chopped
  • ¼ cup roasted almonds, chopped
  • ½ cup mini marshmallows
  • ½ cup semi-sweet chocolate chips
  • 1 cup vanilla, chocolate, or chocolate peanut butter ice cream (optional)
  • to taste melted chocolate or hot fudge (optional)

Instructions

  1. In a medium saucepan, whisk together sugar, cocoa powder, salt, and cornstarch.
  2. Slowly add milk while whisking until smooth, then heat over medium until it thickens.
  3. Remove from heat and stir in chopped chocolate and vanilla.
  4. Reserve ¾ cup of pudding in a separate bowl and chill in the fridge.
  5. Divide remaining pudding into parfait glasses and chill.
  6. Whip the cream until soft peaks form, then add powdered sugar and vanilla.
  7. Fold the reserved pudding into the whipped cream and divide among the parfait glasses.
  8. Mix peanuts, almonds, marshmallows, and chocolate chips, then sprinkle over parfaits.
  9. Chill until ready to serve, then top with a scoop of ice cream and drizzle with chocolate or fudge.
