Instructions
- In a medium saucepan, whisk together sugar, cocoa powder, salt, and cornstarch.
- Slowly add milk while whisking until smooth, then heat over medium until it thickens.
- Remove from heat and stir in chopped chocolate and vanilla.
- Reserve ¾ cup of pudding in a separate bowl and chill in the fridge.
- Divide remaining pudding into parfait glasses and chill.
- Whip the cream until soft peaks form, then add powdered sugar and vanilla.
- Fold the reserved pudding into the whipped cream and divide among the parfait glasses.
- Mix peanuts, almonds, marshmallows, and chocolate chips, then sprinkle over parfaits.
- Chill until ready to serve, then top with a scoop of ice cream and drizzle with chocolate or fudge.
