Baked Sweet Potato Cauliflower Patties

Ingredients

The patties

  • 1 medium to large sweet potato, peeled
  • 2 cups cauliflower florets
  • 1 teaspoon minced garlic
  • 1 cup packed fresh cilantro
  • 1 teaspoon chili powder
  • ¼ teaspoon cumin
  • 2 tablespoons arrowroot starch or gluten free flour of choice
  • ¼ cup ground flaxseed
  • ¼ cup sunflower seeds or pumpkin seeds
  • ¼ teaspoon Kosher salt and pepper (or to taste)
  • 2 tablespoons organic ranch seasoning mix or dairy seasoning mix of choice
  • 1 each green onion, chopped

Dipping sauce

  • to taste dipping sauce of choice

Instructions

  1. Preheat the oven to 400°F and prepare a baking sheet.
  2. Cut the sweet potato into smaller pieces and blend until larger pieces are broken up.
  3. Add cauliflower, onion, and garlic to the blender and pulse again.
  4. In a bowl, mix in sunflower seeds, flaxseed, arrowroot (or flour), cilantro, and remaining seasonings until a thick batter forms.
  5. Scoop ¼ cup of the batter and form into patties about 1.5 inches thick, placing them on the baking sheet.
  6. Chill the patties in the freezer for 10 minutes to set.
  7. Bake the patties for 20 minutes, flipping halfway through.
