Baked Sweet Potato Cauliflower Patties

organic ranch seasoning mix or dairy seasoning mix of choice

Instructions
- Preheat the oven to 400°F and prepare a baking sheet.
- Cut the sweet potato into smaller pieces and blend until larger pieces are broken up.
- Add cauliflower, onion, and garlic to the blender and pulse again.
- In a bowl, mix in sunflower seeds, flaxseed, arrowroot (or flour), cilantro, and remaining seasonings until a thick batter forms.
- Scoop ¼ cup of the batter and form into patties about 1.5 inches thick, placing them on the baking sheet.
- Chill the patties in the freezer for 10 minutes to set.
- Bake the patties for 20 minutes, flipping halfway through.
