Instructions
- Preheat the oven to 350ºF and line a muffin tin with 7 muffin cups.
- In a food processor, process the dates until broken down, then add pumpkin, water, salt, pumpkin pie spice, vanilla, and egg, and process until smooth.
- Add oats and baking soda to the mixture and process until a batter forms, adding more water if needed.
- If desired, fold in dried fruit and pumpkin seeds.
- Scoop the batter into the muffin cups using a 1/4 cup measure.
- Bake for 20 to 22 minutes until the muffins rise and feel firm when touched.
- Let cool for at least 20 minutes before serving.
