Ingredients

The wings

  • 3 pounds chicken wings

The seasoning

  • 1 tablespoon pure maple syrup (or honey)
  • 2 ½ teaspoons pepper
  • 1 ½ teaspoons smoked salt
  • 1 teaspoon thyme (dried)
  • 1 teaspoon paprika
  • ½ teaspoon oregano (dried)
  • ½ teaspoon red pepper (ground cayenne)

Optional accompaniments

  • to taste celery
  • to taste ranch dressing (homemade)

Instructions

  1. 1. Preheat the oven to 425°F and set a cooling rack on a baking sheet lined with aluminum foil.
  2. 2. In a large mixing bowl, pour the maple syrup and add the chicken wings, mixing to coat them evenly.
  3. 3. Arrange the wings on the cooling rack with the thick-skinned side down.
  4. 4. In a small bowl, mix the remaining ingredients and sprinkle half of the spice mixture over the wings.
  5. 5. Press the spice rub into the wings, flip them over, and apply the remaining spice mixture.
  6. 6. Bake the wings for 45 minutes on the middle oven rack, then serve warm.
