Ingredients

The pickling mixture

  • ½ cup white vinegar
  • 1 cup water
  • 2-3 tablespoons granulated sugar
  • 3 cloves garlic
  • 2 teaspoons salt
  • 2 teaspoons black peppercorns
  • ½ teaspoon pepper flakes
  • 1 teaspoon mustard seed
  • 1 sprig thyme (optional)

The onions

  • 2 cups red onion

Instructions

  1. Peel and thinly slice the onions to make onion rings and set aside.
  2. Combine all the ingredients (except the onions) in a pot and bring to a simmer for 8 minutes.
  3. Quickly blanch the onion rings in the hot vinegar mixture.
  4. Transfer the onions to a glass jar and pour the cooled vinegar mixture over them.
  5. Cover and store in the refrigerator, ideally consuming after a day.
