Pickled Onions

The pickling mixture

black peppercorns

pepper flakes

teaspoon
mustard seed

thyme (optional)
The onions
Instructions
- Peel and thinly slice the onions to make onion rings and set aside.
- Combine all the ingredients (except the onions) in a pot and bring to a simmer for 8 minutes.
- Quickly blanch the onion rings in the hot vinegar mixture.
- Transfer the onions to a glass jar and pour the cooled vinegar mixture over them.
- Cover and store in the refrigerator, ideally consuming after a day.
