Pickled Onions

Ingredients

The pickled onions

  • 1 cup red onion, very thinly sliced
  • ½ cup white vinegar or white wine vinegar
  • ½ cup water
  • ¾ teaspoon salt
  • 2 tablespoons cane sugar

Optional additions

  • 1 tablespoon whole spices (any combination of black peppercorns, fennel seed, cumin seed, coriander seeds, mustard seed)
  • 1–2 cloves garlic, sliced
  • 1–2 leaves bay leaves
  • to taste none fresh or dried herbs (oregano, cilantro, scallions, curry leaves, dill)
  • to taste none jalapeno slices

Instructions

  1. Thinly slice the red onion.
  2. In a small pot, combine vinegar, water, salt, sugar, and any optional whole spices, then bring to a boil.
  3. Add the sliced onions and simmer for 30-60 seconds while stirring.
  4. Turn off the heat and let the mixture cool completely.
  5. Transfer to a clean mason jar and store in the fridge.
