Pickled Onions
Ingredients
The pickled onions

red onion, very thinly sliced

white vinegar or white wine vinegar

cane sugar
Optional additions

whole spices (any combination of black peppercorns, fennel seed, cumin seed, coriander seeds, mustard seed)

Instructions
- Thinly slice the red onion.
- In a small pot, combine vinegar, water, salt, sugar, and any optional whole spices, then bring to a boil.
- Add the sliced onions and simmer for 30-60 seconds while stirring.
- Turn off the heat and let the mixture cool completely.
- Transfer to a clean mason jar and store in the fridge.
